Cinnamon Buns

Whatever life throws at you, cinnamon buns are always the answer.
Another declination for a job you really wanted? No motivation to work on your university stuff? Biggest hangover ever? Made a complete fool of yourself?
It is cinnamon buns you need. They will make your life better. I promise. Good friends to moan to could also be an option though. Ok, take both, than you ought to be dancing through the sunshine again, by tomorrow!






Ingredients
Dough:
480g plain white flour
3tbsp. dry rapid-rise yeast
½ tsp. salt
115g melted butter
400ml full-fat milk
2 eggs
1tsp. vanilla extract

Filling:
125g soft butter
125g dark brown sugar
1 ½ tsp. cinnamon
130g walnuts, roughly chopped

For the dough mix all the dry ingredients together than whisk all the wet ingredients and slowly stir and knead them into the flour mixture. Knead with the dough hook for a few minutes, form a ball and let it sit in a plastic bowl, covered with a clean kitchen towel, at warm place for about 25 minutes. Put the sugar, cinnamon and the butter into a mixer and pulse shortly until combined. 


Roll out the dough, spread the butter mixture on it and give it a sprinkle with the walnuts. Then roll it up from the longest side and cut it into pieces about 3cm thick. Put the side by side into a baking tray lined with a baking sheet. Bake in a 230°C oven for about 20 minutes. When risen and golden brown, take them out, let them cool and drizzle some glaze, made with lots of icing sugar and some milk (and maybe some vanilla) on top.
