Banana Bread


Alright, alright. Here is a little break from Christmas charoling and decorating the house with twinkly lights. Get out the bourbon and the mushy bananas you have hanging around the house, cause all you eat right now are tangerines. Just a plain non-sparkly loaf cake will do. Breath in, breath out. See, no presents or tree or decoration to worry about. Bust out a big pot of coffee and enjoy the quiet. And maybe put on the twinkly lights.




Ingredients

115g soft or even melted butter
115g brown sugar
2 eggs
(large, room temperature)
1 tsp. vanilla extract
1 tsp. cinnamon
6 tbsp. bourbon or dark rum
4 small or 2 large very ripe bananas
140g plain flour
2 ½ tsp. baking powder
½ tsp. salt
120g roughly chopped walnuts
120g chocolate chips

As always, start with the butter and sugar, than add the eggs. Mash the bananas and add the dry ingredients, at last fold in the chocolate and the walnuts. 


Fill the dough into a buttered and floured (layered with baking sheets) baking dish (loaf form if possible, if not, who really cares about the form of your cake anyways). Bake at 160°C for 60 to 75 minutes.  This is a no brainer cake with a fabulous outcome. Enjoy yourself!
Also, yes, you can totally make an Instant-Baking-Mix out of this. You can also just make two, freeze one and then give it away as a gift. All so easy!


Notes of truth: Look at the picture of the ingredients. Right, no brown sugar, didn’t have that at home, so I used white one. Also, I didn’t have no walnuts, so I used almonds and hazelnuts. I didn’t either have chocolate chips, so I chopped up some leftover chocolate. And then I forgot to put the darn bananas in the picture. That is the truth my friends, I am that unorganized. Either way it worked out fine. I know you will be better to this dough. And if not, it will work out just fine anyways.
